About Us

Italian for he (or she) who cleaves, chi SPACCA is Chef Nancy Silverton's take on how an Italian butcher would cook. With its nose-to-tail philosophy, chi SPACCA celebrates all parts of the animal and created Los Angeles's first dry-cure program where all charcuterie and salumi are made in-house. chi SPACCA is an “ode to meat, beautiful meat,“ as well as boldly seasoned fish dishes,  an ever-changing array of caramelized farmers' market vegetables, and beautiful salads.
